LEMON AND VANILLA MUFFIN


 


LEMON & VANILLA MUFFIN

 
Ingredients:
1 piece of tetrapack soaked white beans
3 eggs
2 egg whites
7 pcs dates
1 tablespoon of honey or coconut sugar
2 tbsp lemon juice
2 tablespoons melted coconut oil
1 scoop of vanilla protein
3 tablespoons of coconut flour
1.5 tbsp baking soda
1 pinch of salt
Lemon zest from ½ lemon

 
Do this:
Put the oven at 170 degrees.

Mix the beans, eggs, egg whites, dates, honey, lemon and lemon zest to a batter. Gently stir the dry ingredients into the batter together with 2 tablespoons melted and crushed coconut oil.

Put muffin molds on a plate and click 2/3 blister in each form. 
Bake for 15 minutes. 
The muffins should be a little sticky in the middle.
